Chia Pudding Base

I’ve been eating Chia Pudding almost every morning! I’ve also been trying so many mix ins and variations. I’ll make 5 servings at a time so i have them ready for the week. I thought I’d add my base recipe to the the blog and offer up some of those variations to y’all.







 

Chia Pudding Base

Prep time: 5 minutes

"Cook" time: overnight in the fridge


Servings: 1 - super easy to scale this recipe




Ingredients:

1/2 cup unsweetened almond milk

1/4 tsp vanilla extract

1 tbsp sweetener of choice *see notes

1/4 tsp cinnamon

pinch of kosher salt

2 tbsp chia seeds




Directions:

  1. Combine all ingredients, except chia seeds, into a container with a tight fitting lid. I used a mini ball jar. Shake to combine.

  2. Add chia seeds to liquid and stir to combine.

  3. Replace lid and place in the fridge overnight.

  4. In the morning stir the pudding well and top with fresh fruit or whipped cream.

TIPS: During the first hour in the fridge, stir the pudding a couple of times to ensure a smooth texture for your end result.


Notes: You can put the chia seeds through a food processor or blender or even a coffee grinder for a less tapioca texture.


You can also use your choice of sweetners depending on your dietary needs. Same goes for the milk you use.




 

Chia Pudding Variations

add these in during the first step, before adding the chia seeds, unless noted.







Chocolate Peanut Butter Chia Pudding

1/2 tbsp peanut butter *I like Crazy Richard’s

1/2 tbsp cocoa powder




Peanut Butter & Jelly Chia Pudding

1/2 tbsp peanut butter

0.5oz fresh strawberries, mashed



Pecan Pie Chia Pudding

additional 1/4 tsp vanilla extract

additional 1/4 tsp cinnamon

top with 1oz chopped pecans when ready to eat



Chocolate Covered Strawberry Chia Pudding

1/2 tbsp cocoa powder

0.5oz fresh strawberries, mashed




Chocolate Almond Chia Pudding

1/2 tbsp cocoa powder

1/4 tsp almond extract

top with 1oz sliced almonds when ready to eat




Blueberry Almond Chia Pudding

1/2 tsp almond extract

0.5oz fresh blueberrie, mashed

top with 1oz sliced almonds when ready to eat




Coffee Chia Pudding

reduce almond milk to 1/4 cup

replace the other 1/4 cup with brewed coffee

add additional 1/4 tsp vanilla extract




Cafe Mocha Chia Pudding

reduce almond milk to 1/4 cup

replace the other 1/4 cup with brewed coffee

add additional 1/4 tsp vanilla extract

1/2 tbsp cocoa powder




Classic Vanilla Chia Pudding

add additional 1/4 tsp vanilla

add a pinch more cinnamon




Classic Chocolate Chia Pudding

1/2 tbsp cocoa powder
